Every store automatically generates a sitemap file listing products, their primary image, pages, collections and blog posts, and it is really a sitemap index that links to a separate file per resource type. It updates itself. What you cannot do is edit it: unlike robots.txt, it is not a theme template, so there is no file to open.
Removing something from it happens elsewhere. Shopify's documented route is to mark the resource unlisted or set the SEO hidden metafield, which hides the page, blog post or product from sitemaps, search engines and your own store search at once. Keeping a template out of the index is a Liquid conditional you paste into the head of your theme. Both work and neither is comfortable to do across a large catalog, which is the first honest reason to install something here.
The second is that the word means two things. Half these listings generate an XML file for crawlers, duplicating something you have. The other half build an HTML sitemap page for people, which Shopify does not provide at all. Worth knowing which you are shopping for, and worth remembering Google's own caveat that a sitemap helps discovery and does not guarantee anything is crawled or indexed.
