Shopify attaches media to the product, not to the variant. A variant can point at a single image from the product gallery, and that is all a theme is handed: Liquid gives it one featured_image per variant, with no list behind it, and Shopify won't accept a video or a 3D model as variant media at all. So on a stock theme, choosing a color swaps the main photo to that color and nothing else changes, while the gallery underneath keeps scrolling through every other color in the product.

What to look for in a Variant Image app

How images get assigned: Tagging images one variant at a time is fine for a handful of products and impossible for a catalog. Check whether media can be grouped by option value, by a filename or alt-text convention, or in bulk, and what happens to that grouping when you upload another photo six months from now.
What it does to your theme's gallery: The gallery is theme code, so an app either hooks into the one you have or replaces it with its own. Replacing it is where the zoom, thumbnails and mobile swipe behavior you already had tend to go missing. If your product pages come out of a page builder, look for that builder named on the listing rather than a general "works with all themes".
Products with more than one option: A shirt split by color and size has one set of photos per color, not one per variant. An app that thinks in variants makes you attach the same blue photos to blue-S, blue-M and blue-L separately, and re-do it every time a size is added.
Media that belongs to everything: Size charts, packaging shots and lifestyle photos are not specific to a color. Once a gallery starts hiding media, those have to be markable as shared, or they vanish along with the other variants.
