Its checkout components include a money input whose documented uses name pay-what-you-want pricing and tips explicitly, complete with minimum and maximum constraints. But an input collects a number; it does not make that number the price. Turning it into money still needs one of the two mechanisms that can set a line price, and the one that works inside the cart is limited to development stores and the top plan, while the field itself only renders on checkout steps that are restricted the same way.
The route that works on any plan is to leave the cart altogether: build a draft order at the price the customer named and send them an invoice with a checkout link, where that price becomes the basis for tax and totals. It is a slower purchase and it does work. Note that nearly every app here also hides the ordinary price and buy button, because a named price and a listed price cannot both be on the page.
