An ERP connector is a translation problem, and the vocabulary does not line up. The clearest example is stock. Your ERP probably holds one number per item per warehouse; Shopify holds a set of named states against each item and location, incoming, on hand, available, committed, reserved, damaged, safety stock and quality control, and only available is the one checkout can spend. A connector that syncs the wrong one either oversells you or hides stock you have.

Orders divide too. Shopify creates fulfillment orders by itself when an order is placed, one for each fulfilling location, and it is not possible to create them manually. So a single ERP sales order can arrive as several things Shopify wants fulfilled separately, and how a connector reconciles that is worth more than any feature on the listing.

Scale is the third constraint, and it is documented rather than theoretical. The API works on a cost budget that refills at a set rate, and a query too expensive to run is refused with advice to use the bulk operation instead. Any real backfill is therefore asynchronous, which is why "real-time sync" and "initial import" are two different conversations with a vendor.

What to look for in a Odoo app

Which system is right when they disagree: Not a philosophical question. Pick, per object: stock, price, product content, customer record. Then ask the vendor how their connector behaves when both sides changed the same field between syncs, and whether you find out that it happened.
How stock is mapped: Ask specifically which Shopify quantity state the ERP figure lands in, how committed stock is treated, and what happens with a location the ERP does not know about. This one question separates connectors that work from connectors that are demonstrated.
The shape of your catalog: Shopify limits a product to three options, and the reference documentation still carries an older, much lower variant ceiling in places, so it is worth confirming which version a connector was written against. If your ERP models products with four attributes, the mapping is a design decision that has to be made before anything is switched on.
