Colour, size, material: choose any three, and each combination of their values becomes a variant with its own price, stock and barcode. There is room for a great many of those combinations now, considerably more than there used to be, but the number of option axes has not moved.
The other half of the problem is what to do when the thing you need to ask about is not a variant at all. An engraved name or an uploaded logo is a line item property: a plain pair of strings attached to the cart line, carrying no price and no stock of its own.
