Shopify keeps less history than most merchants assume. Deleting a product is final, and the documentation says so plainly enough to recommend archiving instead if you might want it back. Theme code has a timeline, but it restores one existing file at a time, will not recover a file that was deleted, does not cover images, stylesheets or fonts, and does not reach back forever.
