Shopify keeps less history than most merchants assume. Deleting a product is final, and the documentation says so plainly enough to recommend archiving instead if you might want it back. Theme code has a timeline, but it restores one existing file at a time, will not recover a file that was deleted, does not cover images, stylesheets or fonts, and does not reach back forever. The gaps that hurt are orders, customers, metafields and metaobjects, and theme files, so read the scope list rather than the headline. An app that backs up your catalogue and not your metafields has missed where a lot of stores keep their real data.
Whether it restores or merely exports: A zip archive in your cloud drive is a copy, not a restore. The question is whether the app puts data back in place by itself and at what granularity: one product you deleted this morning is a very different operation from rolling the whole store back, and plenty of apps do only the second well.
