Shopify gives a variant one lever when stock runs out, and it is a switch rather than a feature: customers can keep buying it, or they cannot. Which restock actually triggers the message: The event these apps listen for is fired when a variant comes back into stock, and Shopify's own documentation notes that online channels are notified when the variant becomes available online. If your stock moves between locations, arrives through point of sale, or sits at a warehouse you do not sell from, ask specifically what counts as back in stock before the emails go out.
Variant precision: Somebody waiting for the medium in black does not want to hear that the small in white arrived. The alert has to be tied to the variant that was clicked, and the signup button has to follow the variant picker rather than sitting on the product.
