Shopify's paginate tag takes between one and 250 items per page, values above that are clamped rather than refused, and it will not take a visitor past the twenty-five-thousandth item in an array however you ask. Loading more without a reload happens through the section rendering API, which has its own rules, including that scripts inserted as markup do not execute. So an infinite scroll is a stack of ordinary pages fetched politely, and the app's quality is in how it handles that.
The part most likely to cost you is Google's requirement. Its guidance is explicit: give each chunk its own persistent, unique URL, and update the displayed URL with the History API as each chunk becomes the primary one. A build that simply appends products and never changes the address leaves everything past the first page unreachable, and none of the listings here mention doing it.
Worth weighing against Shopify's own advice, too, which points the other way: a dozen to two dozen products per page is named as a common range for good performance, and deep pagination through hundreds of pages is what filters are for.
