Choose the second and the storefront simply refuses, with nowhere for a shopper who still wants the thing to leave their name. There is no waitlist object in Shopify and no per-product signup; the only native way to collect an address with marketing consent is the theme's newsletter form, which knows nothing about which product somebody was looking at.

A waitlist is a demand list: it tells you which variant, in which size, how many people and for how long, which is the one piece of information a stockout otherwise destroys.
