A bundle on Shopify is not a product with stock of its own. The price comes from the parent, availability is calculated from the components, and the order records the parts rather than the bundle, which is why a refund happens at component level too. Selling a bundle draws down exactly the same inventory as selling the pieces separately. That is the behaviour you want, and it is also why bundles are harder than they look.

Fixed, or assembled by the shopper: This is the question the whole category turns on. A set you define behaves predictably and cannot oversell.
