These install as app embeds, and Shopify documents that an app embed block only has access to the global Liquid scope of the page it renders on. The product is not in that scope. So the bar cannot simply read your variants the way your theme does; it has to go and fetch them, which is where a bar that shows the wrong price for a second, or misses a variant, comes from.
Changing a variant from the bar has the same shape of problem. The storefront endpoint for changing a cart line updates quantity, properties and selling plan only, so swapping a size is a removal followed by an add rather than a change. And the express payment button is the strictest case of all: the theme renders it inside a product form, Shopify picks which single button to show, and its markup lives inside a closed shadow DOM where any styling or event tracking aimed at the structure will not work.
